VINEGAR PIE

1 1/2 tbsp flour
2 egg yolks
3/4 c sugar
1/4 c milk
1/2 tsp salt
1 tbsp butter
1 tsp lemon extract
2 tbsp vinegar
1 c boiling water

Method:
Mix the flour and sugar.  Add the vinegar, salt, butter and beaten egg yolks.
Beat until creamy.  Add milk and water and cook in a double boiler until the
mixture thickens.  Flavour with lemon.  Pour into a baked pie shell and cover
with meringue (made with the egg whites and 4 tbsp sugar).  Place in a
moderate oven until lightly browned.
