RAISIN CREAM PIE
                                           
1 c raisins
1 c water
1 c milk
3/4 c sugar
2 egg yolks
1/2 tsp lemon extract
pinch of salt
5 tbsp flour

Method:
Boil the raisins in water for 5 minutes, then set aside.  Heat the milk in the
top of a double boiler.  In a bowl, mix together egg yolks and sugar, stirring
until the sugar is disolved.  Add flour and salt.  Combine egg mixture with
hot milk and cook until thickened.  Blend  the lemon extract and add raisins.
Cool.  Pour into a baked pie shell and top with meringue.  Bake at 325 for 15
minutes.
