BLUEBERRY PIE
4 c blueberries
3/4 - 1 c white sugar
3 tbsp flour
1/2 tsp grated lemon peel
1/2 tsp ground cinnamon or nutmeg
1 tsp lemon juice
1 tbsp butter
pastry
9 inch pie plate

Prepare pastry for 2 crust 9 inch pie. Combine fresh blueberries with sugar, flour, grated lemon peel, ground cinnamon or nutmeg, and dash of salt. Line pie plate with pastry. Fill. Sprinkle with lemon juice and dot with butter. Adjust top crust, cutting slits for steam to escape. Bake at 400 degrees for 35 to 40 minutes.
