BLUEBERRY MUFFINS
1/2 c white sugar
1 1/2 c flour
2 tsp baking powder
1/2 tsp salt
1/4 butter or margarine (melted)
1 egg
1/2 milk
1 c blueberries

In a mixing bowl, beat the egg slightly. Stir in the milk and melted butter. Sift together the flour, baking powder, salt and sugar and add to the egg mixture, stirring just enough to moisten the flour. The batter will be lumpy, so do not over-mix. Fold in the blueberries. Fill greased muffin pans 2/3 full and bake for 20 to 25 minutes in a 400 degree oven.
