Yule Log

3/4 c. cake flour
1/2 tsp. baking powder
1/2 tsp. salt
5 eggs
7/8 c. white sugar, divided
2 squares unsweetened chocolate
1/4 c. cold water
1/4 tsp. baking soda
Icing Sugar
Mocha butter cream frosting (recipe below)
Chocolate leaves
Red "berry" candies

1. Sift flour with baking powder and salt.
2. Beat eggs in large bowl at high speed.
3. Gradually beat in 3/4 of the white sugar and beat until fluffy, thick and light in color.
4. Gradually fold in flour mixture.
5. Melt chocolate in saucepan over low heat, stirring constantly.
6. Immediately add cold water, 2 tbl. white sugar, and baking soda and stir until thick and smooth.
7. Blend chocolate quickly into batter.
8. Pour into a 15" x 10" jelly roll pan which has been greased on the bottom and sides, then lined on bottom with waxed paper and greased again.
9. Bake at 350 deg. for 18 - 20 minutes or until toothpick in center comes clean.
10. Turn out onto cloth which has been sprinkled lightly with icing sugar.
11. Quickly remove the paper and trim off crisp edges of cake.
12.Starting with one short edge, roll up cake in cloth and cool on rack.
13. Unroll cake and spread with 1 3/4 c. mocha butter cream frosting.
14. Reroll cake and place on serving dish with outer edge underneath.
15. Spread remaining frosting on cake.
16. Garnish it with chocolate leaves and red "berry" candies.
17. Store in refrigerator.

Mocha Butter Cream Frosting

3 squares unsweetened chocolate
2 tbl. instant coffee
1 1/2 tsp. warm water
1 tsp. vanilla
3/4 c. margarene or butter
2 c. icing sugar
2 eggs

1. Melt chocolate in small saucepan over very low heat, stirring constantly, then cool.
2. Dissolve instant coffee in water, then add vanilla.
3. Gradually beat in 3/4 of the white sugar and beat until fluffy, thick and light in color.
4. Cream butter or margarene and gradually beat in sugar until light and fluffy.
5. Blend in chocolate and coffee.
6. Add eggs (make sure you wash the outside with vinegar first to kill salmonella if any), one at a time, beating well after each addition until light and fluffy.
7. Makes 3 1/2 c. frosting.
