Almond Paste

1 1/2 c. blanched almonds
1 1/4 c. icing sugar
1 egg white
1/2 tsp. almond extract

1. In a food processor fitted with a steel blade, add the almonds and sugar and process until the nuts are a fine powder.
2. With the machine running, add the egg white and almond extract and process until mixture becomes a paste.
3. Remove from bowl and cover immediately with plastic wrap.
4. Store in fridge or freezer.
5. Makes about 1 lb. paste. I cover my fruit cakes immediately with it.

My children loved to eat it as soon as it came out of the processor, so I made extra for this. Be sure to wipe the egg off with vinegar before using it as it will kill off salmonella if present.
