A pumpkin yielding approximately five lbs. when
2 - 3 lemons
4 lbs. white sugar
pinch of salt
1/2 c. water
1. Remove the peel and cut the pumpkin
into 1/4 inch pieces (1 - 2 in. long).
2. Place them in a large pot and add sugar and water and let stand
overnight. Stir occasionally.
3. Remove the pumpkin pieces and bring the liquid to a boil.
4. Add the pumpkin and cut up unpeeled oranges and lemons and cook slowly until
thick and clear. It makes 6 pints.
